
Last night I had one of my Personal Progress activities for the YW in our ward. We had a BLAST! We did a getting to know you night where I'd had each girl fill out a survey beforehand telling us a bit about herself. Using the answers they provided we made a game out of it. Needless to say it turned out to be really fun and quite loud, just the way I like it :) For the refreshments my really great friend Mindy had an awsome spin on an old favorite. Most of you probably know my favorite cookie recipe, if not, I'll include it at the bottom of the post. Anyway, to add flare she stuck a rolo in the middle of each cookie! YUM! So as you bite into this chocolate heaven a bit of carmel drizzles out. So like each girl, the cookies have a "treasure inside". I'm so glad I have the opportunity to work with the YW in our ward. We have such amazing leaders too! I always come home a little better and happier after I've spent time with them. :)
Cookie Recipe:
1 chocolate cake mix (I like triple chocolate fudge)
2 eggs
1/2 cup oil
Mix together and roll into balls (this is where you'd roll the rolo inside) Cover the rolled cookie in powdered sugar. Bake on a greased cookie sheet at 350 for 6-8 minutes. Don't over bake them, they will look under-cooked. EASY! This recipe makes between 18-30 cookies depending on how big you roll them. - Remember, you don't have to add the rolo, it's just a variation. They're actually really good without too.
Variations:
Add a spoonful of peanut butter to the mix before cooking (thanks Julie! Great idea)
Use a spice cake mix instead of chocolate for a spin on Ginger Snaps.
Of coarse, roll a rolo in the middle for a little added surprise!
